This midsummer night Friday, June 21, the public are invited to head up to the beautiful Glenbarrow waterfall in the Slieve Blooms for a fundraising walk.

I was recently reading a piece by Bronnie Ware, care worker who works in the area of palliative care. she has worked with countless number of patients who are sadly seeing their last days on earth. Bronnie questioned the patients about any regrets they had or anything they would do differently, five common regrets surfaced again and again and I thought I would share them with you .

Peperonata is brilliantly multi-functional-you can serve it hot, warm or at room temperature, as part of a mixed meal or as a vegetable side dish with meat, poultry or fish. Or you can use it as a cooking sauce for the above. It also makes a very nice pasta sauce, just stir it into hot cooked pasta, and sprinkle some parmesan on top.Peperonata
