Eton mess

Coconut curry and eton mess

I quite like one pot dishes and especially the variety that can be made the day before and heated up. Curry is always popular with people; it takes a bit of time to cook but holds well for a couple of days.

Regrets - have too few to mention

I was recently reading a piece by Bronnie Ware, care worker who works in the area of palliative care. she has worked with countless number of patients who are sadly seeing their last days on earth. Bronnie questioned the patients about any regrets they had or anything they would do differently, five common regrets surfaced again and again and I thought I would share them with you .

No regrets.

Summer Fruit and Vegetables

THE gooseberries will soon be making an appearance and as soon as I see them I want to make something with them. The obvious thing I suppose is a tart or a pie ( a tart has pastry on top and bottom, a pie just has a crust on top), also at this time of the year the roadside will be white with the beautiful flowers from the elder tree.

Jim’s multi-functional Peperonata

Peperonata is brilliantly multi-functional-you can serve it hot, warm or at room temperature, as part of a mixed meal or as a vegetable side dish with meat, poultry or fish. Or you can use it as a cooking sauce for the above. It also makes a very nice pasta sauce, just stir it into hot cooked pasta, and sprinkle some parmesan on top.Peperonata
