The four star town centre Portlaoise Heritage Hotel is delighted to introduce their wedding team.
Carol Dempsey is the wedding executive, Carol has worked in the Heritage for eight years and is an expert on the hotel. She has many years experience in organising weddings and events. In her years as an event planner at the hotel she has come across every request possible. No request is too small or too much trouble for Carol.
On your wedding day at the award winning Portlaoise Heritage Hotel every bride and groom will be taken care of by the Manager on Duty.
This team is headed up by Eoin Jacob who is dedicated to looking after weddings as Conference and Banqueting manager. Eoin has an exceptional eye for detail and always goes the extra mile for brides and grooms. Eoin studied hotel management in Galway Institute of Technology.
The Executive Chef at the stunning Portlaoise Heritage is Pauric Scully who has over 20 years experience in the finest kitchens in the South East. Pauric spent a number of years learning his trade at Waterford Institute of Technology. He then honed his skills in the renowned Dooley’s Hotel in Waterford. Following that he moved to Ballykealy House in Carlow. An opportunity too good to turn down came when he was asked to lead the team at Hudson’s Restaurant in Thomastown, Co. Kilkenny. Hudson’s was a member of the Bridgestone Guide and was one of the top 100 restaurants in Ireland at the time.
Pauric’s next challenge was to lead the team at the Lord Bagenal where he oversaw the operation which included a restaurant with 90 covers, a bar which was very busy with locals having food and a very active function business.
We are delighted to have somebody with Pauric’s experience on board and he is an asset to the hotel.
