Sometimes I find cooking for two or three people a lot more work than cooking for a crowd. So when I do cook for two I double up and have enough for the next day. You can be very lucky sometimes when you go to the supermarket, you might find two portions of salmon or sirloin steaks on a special so I push the boat out and grab them with both hands. After all if you were eating them in a restaurant you would pay about four times then price. Will it taste as good as you cook yourself? So here are some recipes for easy living.

CURRIED SQUASH SOUP.

2 tbsp olive oil.

1 butternut squash, peeled, deseeded and diced.

8oz carrots,peeled and diced.

1 onion, diced,

4oz red lentils.

2tbsp curry powder.

1 can of coconut milk.

1pt chicken stock.

Salt, pepper.

Heat the oil in a large saucepan, add in the onion, carrot and the butternut squash. Give a good stir . then add in the curry powder. Add in the lentils, stock and coconut milk and give everything a good stir. Bring it up to a boil then turn the heat down to a simmer for 20 mins until everything is tender. Using a hand blender blitz till everything is smooth. Serve in warm bowls with a blob of cream on top and a sprinkle of chopped coriander.

ONE POT FISHSTEW

2 tbsp olive oil.

1 Sliced fennel bulb.

2 cloves of crushed garlic.

1 small red chillc,chopped.

1 can of chopped tomatoes.

White wine.

8oz squid rings.

8 large prawns.

4 fillets of sea bass.

3 handfuls of mussels.

Large bunch of basil.

Heat the oil in a large saucepan, then add in the fennel, garlic and chilli. Then add in the chopped basil, tomatoes and wine. Then add in the squid, simmer for about 35mins. Scatter the mussels and prawns over the top, lay the sea bass fillets on top and cook for about 10mins.

Serve with some crusty bread and salad.

Sirloin Steak with Rocket

4 sirloin (striploin steak) 8oz/225g each, I use Hereford Prime Beef

2tbsp olive oil

Salt & pepper

Fresh rocket, about 4 handfuls

3tbsp extra virgin olive oil

2tbsp lemon juice

Drizzle some olive oil over the four steaks and season with salt & pepper. Place some oil in a large frying pan and cook the steaks for 2 minutes on each side or longer if you prefer them more well done.

2mins each side: Rare

4mins each side: Medium

6mins each side: Well Done

Wash the rocket and dry well, cut into 3 if the leaves are very long, season with salt & pepper, toss in the olive oil and lemon juice, divide between four plates. Place a cooked steak on top and serve the garlic and rosemary potatoes on the side of the plate.
