A satisfying and comforting Chilli Con Carne is our ultimate meal in bowl this week and to make it really special we serve it with a Tomato, Cucumber & Avocado Salsa.

The chilli is medium heat; you can add more or less chilli according to your taste. The quantities I have given you are for a double batch and it freezes really well.

The wonderful thing about Chilli Con Carne is the flavour is even more delicious the longer it is cooked, and is a really healthy way to get nutritious food into your family.

Chilli Con Carne

4tbsp Olive Oil

2 Large Spanish Onion, diced

4 Garlic Cloves, freshly crushed

4 inch Piece of Fresh Ginger, grated

2lb Lean Minced Beef

4tsp Tomato Puree

2 Red Peppers, chopped & diced

2 Yellow Peppers, chopped & diced

½ Red Chilli, deseeded and chopped

½ Green Chilli, deseeded and chopped

1½pt Beef Stock

3 tins Chopped Tomatoes

2 tins Kidney Beans

1 Bunch of Fresh Coriander, chopped

3tsp Freshly Ground Cumin

2tsp Cinnamon

1tbsp Brown Sugar

Salt & Pepper

Heat the oil in a pan and fry off the onion until nice and soft, add the garlic, red & green peppers, ginger, cinnamon, cumin and red & green chilli and simmer for 2 to 3 minutes. Add the minced beef, the stock, kidney beans, tomatoes, coriander, brown sugar, tomato puree and salt & pepper, and cook for 1 hour. This is a dish that the longer you cook it for the more the flavour intensifies, so if you can leave it for an extra hour after it has cooked it will taste even more delicious. Lovely served with Brown or White Basmati Rice and top with some delicious Greek Yogurt or Low Fat Natural Yogurt.

Tomato Cucumber & Avocado Salsa

3 Avocado, stoned & chopped into pieces

1 Cucumber, deseeded & diced

1lb Cherry Tomatoes, halved

Dressing

75ml Olive Oil

Juice of 2 Limes

2tbsp Honey

2 Cloves of Garlic, crushed

1 Bunch of Fresh Coriander, chopped

Salt & Pepper

To make the dressing whisk together the olive oil, lime juice, honey, garlic and salt & pepper. Place the avocado, cherry tomatoes & cucumber into a serving dish combine with the dressing and garnish with the chopped coriander. Serve with the chilli con carne and basmati rice. The flavour of the hot chilli and the cool salsa go really well together and are perfect for these cold winter evenings.
