A luxury Laois business venue is about to open its doors, after a long and meticulous birth.
Ómós, a 16-room guesthouse and 40-seat restaurant led by chef and writer Cúán Greene will open in the first week of July, on the outskirts of the heritage town of Abbeyleix.
It is set to rival the finest hospitality properties in Ireland, including its Laois neighbour Ballyfin House.
Ómós is set on 4.2 acres in the beautifully restored Victorian mansion, Millbrook House which was bought and renovated from a ruin by Abbey Leix House and Farm owner, Stripe co-founder and billionaire John Collison.

Added to the house is a purpose-built contemporary restaurant overlooking the millpond, Ómós is described as “an overnight experience”, where the rooms, restaurant, and grounds work together from arrival through to the following morning, offering a luxury getaway for lucky guests.
It is a dream that started six years ago for Mr Greene, reflecting years of research, travel, collaborations and evolving ideas around what contemporary hospitality in Ireland can be.
The name Ómós - meaning homage, duty and respect - reflects the intention behind the project: to create something lasting, with a strong sense of place, shaped by its surroundings and expressed through the art, design and Irish craft integrated throughout.
The son of artists Róisín de Buitléar and Terry Greene, Cúán Greene grew up surrounded by art and the Irish language, his approach is shaped as much by the broader sense of Ireland today as it is by his time spent in the kitchens of Noma and Geranium, or as head chef at Bastible in Dublin.
“We are good to go and couldn’t be more excited to welcome our first guests in July. We can't wait for them to experience what the team has created in full: from time spent in the rooms and walking the grounds, to the rhythm of the restaurant and the wider landscape that shaped it.
“They’ll explore what we are trying to create now, as well as what was here before we arrived - on the table, the art, or watching a perfect pint in Morrissey's settle as you take it all in," the chef said.

Guests can expect a menu rooted in the Irish landscape, where familiar flavours are reimagined through thoughtful technique and exceptional produce.
A refined take on the classic Irish “mammy’s salad” perfectly captures this approach, combining elderflower, gooseberry fermented barley and rare breed ham to transform a humble, nostalgic dish into a celebration of the Irish larder.
Fermentation, foraging and seasonal ingredients run throughout the menu, creating food that feels both deeply personal and distinctly modern.
The 16 rooms - ten in the main house and six in the adjacent coachhouses - were designed by Ryan W. Kennihan Architects with Asca Studio and Relief Gallery, each with its own character, Irish bed linen, handcrafted ceramics and Ómós bodycare.

Designed with care and built with intention, Ómós is promised to be “a place to work well and live well”.
From a balanced four-day week to beautifully designed staff spaces, shared meals, and a culture grounded in kindness and respect, everything at Ómós is shaped to support creativity, professionalism and a meaningful daily rhythm for guests and team alike.
