The popular Delicious Dishes cookery column will return next Tuesday in the Lifestyle Pages of the Leinster Express.
Imelda Tynan Devitt is set to take over the column from her late brother, Jim, who passed away last September.
Jim is still fondly remembered by readers of his Leinster Express cookery column and the many fateful customers of one of the landmark eateries in the country at The Kitchen and Foodhall in Portlaoise, where he served culinary delights for 30 years.
Imelda is the owner and mananger of Tynan’s Restaurant which opened at The Storeyard, Portlaoise on September 6, 2012, following the closure of Jim’s Kitchen in 2011.
She had worked for over 20 years with her brother Jim Tynan at The Kitchen and Foodhall (Jim’s Kitchen).
Writing about her late brother in next week’s column, Imelda says: “He instilled in me that food should be cooked for flavour and that the best dishes could be produced from simple ingredients, cooked as they should be.”
She hopes the column will be a journey of bringing people the recipes which Jim taught her, with the emphasis always on flavour and taste.
Imelda encourages readers to cut out and keep the recipes each week, and build up their own recipe book, which can be refered back to again and again.
